I Was Hurting After My Party

The last place I expected to be after my birthday party was at the office of a chiropractor in Peoria. Okay, technically it was not right after my birthday party, but rather two days later. That is because I tried to take the pain for that long, thinking that it was going to get better and go away. My husband threw a pool party for me, and someone jokingly threw me in the pool. I was not expecting it though, and I hit my back against the side of the pool. It really was a freak accident that should not have hurt me at all.

We have all thrown each other in the pool from time to time, and no one has ever gotten hurt from it. We don’t take stupid risks when we do this, but this time we all learned a lesson, that it is a risk every single time. I was able to enjoy the rest of the party, but I think the few drinks that I had may have had something to do with my ability to take the pain. (more…)

My Old Car is a Total Loss

I suppose in some ways I sort of came out ahead, although it is sort of hard to feel good about it in the totality. I have two cars and the one I was driving was on it’s last legs. It had started to smoke in a most unfortunate way. I assumed the heads were gone and was going to park it forever when I got home. It was not worth fixing. Of course aside from buying my car that other driver sent me to a chiropractor in San Jose and to a bunch of doctors. The other guy did not stick around to let me yell at him any way and no one has yet proven who it was. Of course I got a somewhat decent look at him and I am reasonably sure that he is the boyfriend of the girl who owned the car. (more…)

I Got Hurt at the Gym

I decided to get into better shape. I was not overweight, but I was not really in good shape either. I joined a gym, and I enjoyed working out the first couple of days. I took it easy, but by the third day I felt I was ready for a challenge. That was a mistake because I ended up getting hurt! I fell off of a machine, which was embarrassing enough. It did not help that I had to go and see a Sacramento chiropractor because my back was hurting so bad and I could not hardly sit up straight let alone walk without being hunched over.

I was going to give it a few days but decided that was just silly. With how much I was hurting, I did not want to risk that I had done something more serious than just a minor twist. I went to the same chiropractor that I had seen when I was in a car accident a few years ago, figuring the staff there would be able to tell me if they could help me or if I would need to take my embarrassment one step further by seeing a specialist. Perfect Solution for Post-operative Pain

I eventually found myself at a chiropractor in Santa Barbara about a year after I had surgery on my knees. They actually put in knee replacements as I’d worn out the cartilage over the years. I think the problem started when I played competitive tennis as a youngster. All that pounding on the court for several years led me down this path. There’s no going back, obviously, but replacing bad knees is generally a safe procedure. They warned that there could be some post-operative pain (of course), but I thought I’d bounce right back after a few weeks of bed rest.

When the pain didn’t go away, I still didn’t think much of it. The doctors said my knees looked good and to not worry about the pain as it should still go away. The problem is that the pain did not go away. (more…)

I Am Happier in an Apartment

I was not sure what I was going to do. My landlord told me just the other day that I am not going to be able to renew my lease. I want to be angry over that but it is probably a blessing because we don’t really get along. He has been raising the rent almost every year for the last four years, and it was just getting to be where I could not afford it. I decided to look at luxury apartments for Jackson MS before I looked at any rental houses for a number of reasons.

The main reason is because I did not want to get into the same situation again. When I rented the house several years ago, I was dealing with his father, who is a lovely person. He gave control to his son though, and that is when things started changing for me. I did not want to live somewhere where the person in charge could just quote any price and I had to accept it or move. (more…)

Enjoying Our New Apartment at Cedars of Edina in Minnesota

Anytime you move from one apartment to the next, you want it to be an upgrade. Who wouldn’t? You want your next apartment to make up for any shortcomings of the last place where you lived. We found that when we were looking at a website for Cedars of Edina in Minnesota. The kitchen having quartz countertops is really nice. No more of that plastic veneer over what looks to be glued wood chips. This is real quartz that is smooth, easy to care for and looks beautiful. The other stuff other apartments use looks cheap.

The next thing we liked is stainless steel appliances. Very modern and give the kitchen such a nice look. We also have big walk-in closets for storing everything. No more plastic bins under the bed or stacked in the corners. (more…)

Boost your brain and get and focused!

It is not just students who could do with a brain boost! It is important for our brain to be in peak condition to maximize our concentration, focus and clarity and to prevent degenerative brain conditions such as dementia, alzheimers and parkinsons.

Good fats like coconut oil, olive oil and butter are great for keeping the brain in shape! One of my favourite ways of having some good oils in the morning is in a ‘Butter Bomb’!

It is made by making a good, organic (water-extracted decaf for me) coffee in a plunger, then pouring it into a jug and blending in one teaspoon of organic butter, and either a dessertspoon of the thick part of a can of coconut milk, or a teaspoon of coconut oil and a half teaspoon of honey if desired. It blends up as a delicious creamy, cappuccino-like drink but is an energy bomb! On top of my 2 organic soft-boiled eggs, this breakfast keeps me going for hours! Don’t be afraid of weight gain or increasing your cholesterol with eggs. It is well-documented in new scientific research that organic eggs and saturated fats like coconut oil are actually healing for the heart and don’t contribute to weight gain.

So here is how is works:
When your blood sugar spikes and dips all throughout the day, it is very destructive to concentration levels. For this reason, it is important to be mindful of the type and amount of carbohydrates you consume. Avoiding refined grains, sugar and changing them for more protein based meals, with vegetables as the carbohydrate would be helpful. And add some saturated fats like butter/coconut butter or olive oil onto vegetables to further stabilise blood sugar levels.

If you are already balancing blood sugar levels and eating well, it may be that a deeper issue is affecting your brain. Issues like toxicity from amalgam fillings, environmental toxins and chemicals, or toxins produced by the bugs in you (such as yeast overgrowth/candida) may be damaging to the brain. The result may be symptoms like poor concentration and what we call ‘brain fog’ – a feeling as though you have a mild hangover even though you haven’t been drinking!

Cajun Chicken Sandwich with Mango

Cajun Chicken Sandwich

1 chicken breast, skinned
Olive oil
2 tsp Cajun seasoning
4 tomatoes, sliced
Telegraph cucumber, sliced
Carrot, julienned
Red capsicum, julienned
1 red onion, finely sliced
Basil pesto
Ground sweet paprika for garnish
Chopped parsley for garnish
Foccacia bread, cut into 4 triangular pieces and sliced through the middle Fresh mesclun salad

Mango mayonnaise, see recipe below
Vinaigrette, see recipe below

  1. Place the chicken breast into a roasting dish with a little olive oil and sprinkle both sides with the Cajun seasoning.
  2. Bake in an oven at 180¡C for 10 minutes or until the chicken is just cooked.
  3. Cool and cut the meat into slices.
  4. Toast the foccacia and put the bottom slice on each plate.
  5. Place mesclun salad on the bread then top with tomato and cucumber slices.
  6. Put the carrot, capsicum and red onion on top and drizzle with a little vinaigrette.
  7. Place the chicken strips on top; drizzle with the mango mayonnaise and a little pesto.
  8. Garnish with sweet paprika and parsley.
  9. Lean the top slice of the bread against the sandwich and serve .

Mango Mayonnaise

Makes about 1 litre, depending on thickness
3 egg yolks
1 Tbsp white wine vinegar
1 Tbsp lemon juice
1 Tbsp Dijon mustard
1 tsp salt
1/2 tsp cracked pepper
Good-quality oil
1 cup mango pulp (sweetened if desired)
1 Tbsp brown sugar

  1. Put the egg yolks, vinegar, lemon juice, mustard, salt and pepper in a food processor and switch on high.
  2. Slowly pour in some oil until the mayonnaise thickens, then add the mango pulp and the brown sugar. Continue to add oil until the desired thickness is reached.
  3. Store the in refrigerator until needed.


2 cups olive oil
3/4 cup white wine vinegar
1/2 cup wholegrain mustard
1/4 cup castor sugar
1 tsp salt
1 tsp cracked black pepper

Mix the ingredients well (preferably with a blender wand) and store in the refrigerator until needed.

Serves 4
